Casein


Manufacturing of Casein

There are two types proteins available in milk basically- Milk Proteins & Whey Proteins, Milk proteins are called casein, to separate the Casein from Milk pre separated skimmed milk is required, Coagulation is the process separated casein and whey from skimmed milk,  To coagulate the milk  dosing of acid/ rennet is required ,

After coagulation separation of solids and liquid is performed with the help of decanter centrifuge.  Separated solid mass called casein and remains whey.

Washing of casein is also required to reduce the acidity and remove the impurities , washing is performed in a tank with hot water, Again this water mix casein is pass threw the decanter to remove the wash water,

After second stage of decantation this casein transferred to specially designed dryer for drying.

After drying casein is packed in 25 kg bags before dispatch.


De-mineralized Whey Powder

Whey received during the manufacturing of casein is clarified first to separate the fines particles of casein from the whey; Centrifugal separator is used to separate the fins from liquid whey.

Pasteurization of whey is also required to store the whey for further processing; Plate type heat exchanger is used for pasteurization of whey.

To remove the water and minerals partially from the Nano Filtration system is used, This is a membrane filtration system. After passing threw the NF solids in whey increases from 5% to 18 % and mineral level in whey reduces by 40%.

To de mineralize the whey more then 40% Electro Dialysis system is used, whey can be de-mineralized up to 95 % with the ED, degree of demineralization can be selected from 40 to 90%.

Vacuum evaporator is used to increase the solid from 18% to 60% good solids in whey are required for proper crystallization,  Crystallization process is required to develop the non hydroscopic properties.

After crystallization whey is feed to the dryer to make whey powder, Spray dryer is used for drying of whey. Whey powder is packed in 25 kg bags before dispatch.
